
Ingredients:
1 sourdough baguette, cut into -1/2 inch slices
1 tablespoon extra-virgin olive oil for bread
8 roma (plum) tomatoes, diced
⅓ cup chopped fresh basil
1 ounce Parmesan cheese, freshly grated
2 cloves garlic, minced
1 tablespoon good quality balsamic vinegar
2 teaspoons extra-virgin olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Directions:
Step 1: Prepare Bread for toasting. Slice baguettes into 1/4 inch - 1 inch thick slices. Place on lined parchment paper. Drizzle with olive oil and smother with minced garlic.
Bake for 8-10 minutes at 350 degrees. Until golden brown and lightly toasted.
Step 2: Dice Tomatoes & chop basil. Place in a bowl.
Step 3: Add Balsamic vinegar, salt, ground pepper, cheese & olive oil.
The tomatoes and basil can be prepared a few days in advance. This can enhance the flavor.
Step 4: Take bread from oven. Cover each slice with a heaping spoonful of tomato
mixture.
Step 5: Put on some classical guitar music and pretend you are in Italy. Enjoy!
